Roasted Baby Carrots with Thyme

This colorful side dish is as easy on effort as it is on the eyes. Coat glorious orange carrots in olive oil, thyme and garlic powder and roast until tender and lightly caramelized. This tasty side works equally well for a weekday dinner or a holiday – and kids love them!

Instructions

  1. Preheat oven to 425 degrees F. Line sheet pan or baking dish with parchment paper.
  2. In large bowl, combine olive oil and seasonings; add carrots and toss to coat.
  3. On pan, arrange carrots. (Note: Do not pour excess liquid onto sheet.)
  4. Roast, stirring once or twice until browning and fork tender, about 25 minutes.
