Cowboy caviar, also known as Texas caviar, originated about 80 years ago and is considered a classic Tex-Mex party appetizer. A mixture of fresh, wholesome ingredients and a zesty dressing, it’s a guaranteed crowd-pleaser, especially when served with homemade tortilla chips. This version features sugar-free apple cider vinaigrette and roasted pumpkin seeds for extra crunch. Saddle up your horse, throw on your Stetson and gallop with this cowboy caviar to your next party.

Instructions

  1. In large bowl, combine veggies, cilantro and pumpkin seeds. Gently fold in avocado.
  2. In small bowl, whisk together dressing and pour over veggie mixture. Stir to combine.
  3. Cover and chill until serving to allow flavors to blend.
  4. Serve as dip. To make a complete meal, serve with chicken, fish or quinoa.
