Ingredients
Dip
- 3 cups cooked black beans, black-eyed peas or combo of both
- 1 cup cooked corn kernels
- 1 cup tomatoes chopped
- 1 cup red bell pepper diced
- ¼ cup cilantro minced
- ¼ cup pumpkin seeds (roasted and salted)
- 1 avocado diced
Dressing
- 2 Tbsp. olive oil
- 2 Tbsp. apple cider vinegar
- 1 garlic clove crushed
- 2 Tbsp. fresh lemon juice
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp oregano
Instructions

In large bowl, combine veggies, cilantro and pumpkin seeds. Gently fold in avocado.

In small bowl, whisk together dressing and pour over veggie mixture. Stir to combine.

Cover and chill until serving to allow flavors to blend.
