Ingredients
- 1/4 cup cacao nibs
- 1/4 cup pumpkin seeds
- 12 pitted dates
- 1/4 cup pumpkin puree
- 1 Tbsp. maple syrup
- 1 Tbsp. organic coconut flour
- 1/2 cup almond protein powder
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground allspice
- 1/4 tsp. ground nutmeg
Optional:
- 1/2 cup shredded coconut
Instructions

In food processor, pulse pumpkin seeds and cacao nibs into large crumbs; remove and set aside.

In food processor, process dates into small crumbles. Add remaining ingredients, including reserved pumpkin seed mixture, and process until dough forms, about 1-2 minutes.

Portion 1 tablespoon per serving and shape each into ball. If desired, roll each ball in coconut.
