Fresh-off-the-grill flavor doesn’t actually require a grill. You can get that same rich char from a sprinkling of smoked sea salt. Of course, you’ll want to pair it with something fresh and juicy so it really pops off the plate. Prosciutto and melon couldn’t be more perfect for the job. Add creamy mozzarella and a drizzle of olive oil to help soak up the seasoning and round out this smoky-sweet appetizer. Even though it’s served chilled, everyone will think it was prepared over heat.
Ingredients
1 medium melon
10 – 12 oz. fresh mozzarella
1 lb. prosciutto
3 Tbsp. extra virgin olive oil
1 oz. Gustus Vitae Smoked Sea Salt
Fresh basil to garnish (optional)
Directions
1. Slice open and core the melon. Cut into 2-inch-long slices, about 1/8th of an inch thick.
2. Drain mozzarella and pat dry. Cut mozzarella into pieces similar in size to melon slices.
3. On a large serving tray or multiple plates, arrange melon, mozzarella and prosciutto.
4. Add a couple leaves fresh basil.
5. Drizzle olive oil over the entire platter and generously sprinkle smoked sea salt on top.
6. Cover and store in refrigerator until ready to eat. This appetizer is best consumed the same day but will keep for up to 2 days if refrigerated.
