Ingredients
- 2 lbs. russet potatoes peeled
- 1 large yellow onion peeled, quartered
- 2 large eggs
- 1-1/2 Tbsp. tapioca flour or arrowroot flour
- 1 tsp. kosher sea salt
- ½ tsp. ground black pepper
- Avocado oil spray
Instructions
-
Preheat oven to 300 degrees F and line baking sheet with parchment paper. (Note: baking sheet is to keep latkes warm and crisp before serving.)
-
Using hand grater, shred potatoes and onions.
-
Line colander with paper towels and add shredded mixture. Squeeze as much water out as possible.
-
After squeezing, place mixture in large mixing bowl and add eggs, flour, salt and pepper. Mix with hands until well combined.
-
Preheat air fryer to 375 degrees F, then set timer to 16 minutes. Coat racks or basket with cooking spray. Drop 2 tablespoons of mixture into air fryer and flatten to make patties. Repeat until rack or basket is covered but not crowded. (Note: Cook in batches.)
-
Halfway through cooking, at eight minutes, quickly spray tops of patties with cooking oil and flip over. Cook 8 more minutes. Keep earlier batches warm on baking sheet in oven.
-
Serve with scallions/chives and sour cream or with applesauce.
