Air Fryer Potato Latkes

Instructions

  1. Preheat oven to 300 degrees F and line baking sheet with parchment paper. (Note: baking sheet is to keep latkes warm and crisp before serving.)
  2. Using hand grater, shred potatoes and onions.
  3. Line colander with paper towels and add shredded mixture. Squeeze as much water out as possible.
  4. After squeezing, place mixture in large mixing bowl and add eggs, flour, salt and pepper. Mix with hands until well combined.
  5. Preheat air fryer to 375 degrees F, then set timer to 16 minutes. Coat racks or basket with cooking spray. Drop 2 tablespoons of mixture into air fryer and flatten to make patties. Repeat until rack or basket is covered but not crowded. (Note: Cook in batches.)
  6. Halfway through cooking, at eight minutes, quickly spray tops of patties with cooking oil and flip over. Cook 8 more minutes. Keep earlier batches warm on baking sheet in oven.
  7. Serve with scallions/chives and sour cream or with applesauce.
