Muffin brownies? Get out of townies! These mildly sweet, highly nutritious breakfast bites are loaded with whole plant foods, including ripe plantains, oats, dates, cacao and cinnamon. If you’re into freshly baked treats (and your entire house smelling like a bakery), you’re going to want to try this recipe.

For a sweeter batch, add a drop more maple syrup. Not sure how much? Adjust to taste! The best part about egg-free baked goods is that you can taste your creation as you go. To serve, slice one open and spread on some plant-based butter, or enjoy with a drizzle of all-natural peanut butter.

Vegan Chocolate Plantain Brownie Muffins

Servings 7 brownie muffins

  1. Preheat oven to 350 degrees F. Lightly coat muffin tin wells with coconut oil.
  2. In bowl, use fork to mash plantains until mostly smooth (a few lumps are OK). Set aside.
  3. In blender, combine dates and water until syrupy. Pour into mashed bananas. Add oat flour, cacao powder, baking powder, maple syrup and cinnamon. Mix until fully incorporate. If mixture appears stiff or doughy, slowly stir in more water until it reaches batter-like consistency.
  4. Spoon batter into muffin tin wells a little over halfway. Optional: sprinkle hemp seeds and/or cacao nibs on top of each muffin.
  5. Bake for 25 minutes. Cool in pan for a few minutes and then transfer muffins to wire rack or plate until just warm or to cool completely.
