It’s simple and quick to throw together as an appetizer to scoop up with tortilla chips, but can be part of a bigger presentation when served as a sassy summer side to top grilled fish or chicken tacos.

Instructions

  1. In medium bowl, combine pineapple, onion, peppers and cilantro.
  2. In separate bowl, whisk together lime juice, vinegar, pineapple juice, salt and pepper.
  3. Pour dressing over salsa and mix well.
  4. Refrigerate up to 3 days.
