Peanut Butter Snack Balls with Chocolate Chips

Makes 10

Ingredients

1 cup pitted dates
1/2 cup Simple Truth Natural Almonds
2 Tbsp. Simple Truth Organic™ Flaxseed Meal
3 Tbsp. Simple Truth Organic™ Chocolate Chips
1/4 cup Simple Truth Organic™ Creamy Peanut Butter
1 Tbsp. Simple Truth Organic™ Unsweetened Vanilla Almond Milk
1 tsp. Simple Truth Organic™ Vanilla Extract

Directions

  1. In a food processor, process almond until finely ground. Add dates, flaxseed meal, peanut butter, milk and vanilla. Continue to process until smooth and fully combined. Mixture should be moist and sticky.
  2. Transfer mixture to a large mixing bowl. Fold in chocolate chips.
  3. Equally divide mixture into 10 equal pieces and roll each into a ball.
  4. Serve immediately or let chill in the fridge before eating.
