  1. In large mixing bowl, combine chia eggs with pureed peaches, vanilla and almond milk.
  2. Slowly add protein powder almond and coconut flour. Mix well.
  3. Over medium-high heat, in well-oiled iron skillet, pour 1/4 cup pancake batter.
  4. Cook until bubbles form, flip pancake and finish cooking.
  5. Serve topped with sliced peaches or peach puree and favorite nuts.
