Nuddy Buddy Pancakes Free-From the Top 8 Allergens

Ingredients
1 box Enjoy Life Pancake & Waffle Mix with Ancient Grains
1 cup Enjoy Life Mini Chocolate Chips
1 cup toasted sunflower seeds
½ cup sunflower seed butter
Flavorless coconut oil for greasing skillet
Directions
- Heat a nonstick skillet over low-to-medium heat.
- Preheat oven to 200 degrees F and cover a baking sheet with foil; set aside.
- Prepare pancake mix according to package directions.
- Once batter is ready, lightly grease the warmed skillet.
- Scoop out 1/3 cup of batter and carefully pour onto hot skillet, repeat a couple more times, leaving room between pancakes.
- Immediately sprinkle 1 teaspoon Enjoy Life Mini Chips and 1 teaspoon toasted sunflower seeds onto tops of each pancake.
- Cook until small bubbles have formed and sides look dry. Flip over and cook another 1-2 minutes.
- Place cooked pancakes on foil-lined baking sheet and move to preheated oven to keep warm while you cook remaining pancake batter.
- Once all pancakes are done, warm sunflower seed butter in the microwave for 30 seconds. If not hot or smooth enough, stir and warm another 30 seconds.
- Drizzle sunflower seed butter over pancakes, sprinkle extra chocolate chips and toasted sunflower seeds over the top and serve.
