Paleo Sweet Potato-Pecan Cookies

This clever recipe combines two of everyone’s favorite pie flavors – sweet potato and pecan – to create a singularly spectacular cookie! Paleo-friendly ingredients, including a homemade flour made from pulverized pecans and maple syrup instead of sugar, make this festive fall treat OK for anyone to eat. Enjoy a slice of the season (no plate or fork needed!).

Ingredients
2 cups pureed sweet potato (about 2 large potatoes)
2 cups pecans
1/2 cup pure maple syrup
1/4 cup chocolate chips
1 tsp. cinnamon
1/4 tsp. nutmeg
1 egg, beaten

Directions

  1. Preheat oven to 350 degrees F.
  2. In food processor, add pecans and reduce to a flour.
  3. In bowl, combine all ingredients and mix well.
  4. Using spoon, scoop dough and drop onto parchment-lined baking sheet.
  5. Bake cookies for 25 minutes.
