Paleo Super Nachos with Dairy-Free Sour Cream

Dairy and gluten nacho friends anymore? No worries! These paleo-friendly *super* nachos are far more superior. Start with a base of tortilla chips made from cassava flour layered high with grass-fed ground beef, dairy-free “cheese” sauce (homemade or store-bought), coconut-based sour cream, olives and raw veggies including hot jalapeno peppers. The following recipe also includes ingredients for a homemade taco seasoning blend – free of unnecessary additives and preservatives found in packaged varieties.

Paleo Super Nachos with Dairy-Free Sour Cream

Ingredients

Dairy-free sour cream

Instructions

  1. In small bowl, mix taco seasoning ingredients and set aside.
  2. In another small bowl, whisk dairy-free sour cream ingredients until mixture becomes creamy and set aside.
  3. In skillet over medium heat, cook ground beef and 2 tablespoons taco seasoning for 10-12 minutes or until crumbly and no longer pink. Drain grease, cover to keep warm and set aside.
  4. On large pan, spread tortilla chips evenly. Layer on taco meat, warm cheese sauce, olives, peppers, green onions, cilantro, avocado, sour cream and any other toppings you prefer. Serve immediately.
