As fuss-free as any crockpot creation, this chilled berry soup takes just minutes to make in your blender and combines fresh, in-season ingredients for a paleo diet-friendly starter, between-course palate cleanser or dessert. Vary it up with your favorite fruits and herbs — you might just create your own signature spring soup style.

Paleo Chilled Blueberry Soup Recipe

Ingredients

2 cups fresh blueberries
½ cup loosely packed fresh basil leaves
1 Meyer lemon; half juiced/half reserved for garnish
1 cup coconut water
1 small avocado
Freshly ground nutmeg, for garnish

Directions

  1. In blender, combine berries, basil, lemon juice, coconut water and avocado; whiz tuntil well blended.
  2. Pour soup into four ramekins and refrigerate until ready to serve.
  3. Garnish with nutmeg and lemon wedges
