Nut “Cheese” Topping (Substitute for Grated Parmesan Cheese)

Anything grated parmesan cheese can do, this vegan “cheese” recipe can do better. Whether you’re serving pasta with sauce, topping pizza, preparing a salad or making pesto from scratch, this tasty nut cheese will take your dish to new levels. Besides just exceptional taste, when you sprinkle it on your plate, you’re getting a healthy dose of plant-based protein without the sodium and cholesterol you’d get from the traditional dairy-based topping. Plus, you’re getting all the other health benefits of nutritional yeast!

Ingredients

1 cup hazelnuts or Brazil nuts, soaked and drained
1/4 cup nutritional yeast
Pinch sea salt
Avocado oil, optional

Directions

  1. Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
  2. In a food processor or high-speed blender, add all ingredients (except avocado oil). Process until combined or well blended.
  3. Spread onto prepared baking sheet and bake for 30 minutes. Drizzle with avocado oil, if desired.
