The combination of whey protein, oat flour and creamy peanut butter make overeating a thing of the past. The recipe calls for chocolate chips and shredded coconut, too, but feel free to spruce up your snack whichever way the wind takes you.
No-Bake Peanut Butter Protein Bars
Ingredients
6 scoops vanilla whey protein powder
1/2 cup oat flour
1/2 cup creamy peanut butter
1 Tbsp. coconut nectar
1/4 cup unsweetened almond milk
1/2 – 3/4 cup chocolate chips
1/2 cup shredded coconut
Directions
- Coat an 8” x 8” baking dish with non-sticking cooking spray.
- In a large mixing bowl, combine all ingredients, adding chocolate chips and coconut flakes last. Stir until well combined. Add more almond milk, if needed, but mixture should be thick and firm.
- Spoon batter into prepared baking dish, using a spatula to smooth it out.
- Place in freezer until firm, about an hour. When ready to serve, let dish sit out for a minutes before cutting into it.
