Skip the guilt and try this batch made with healthy, good-for-your-gut tigernut flour. Sweetened with maple syrup and vanilla, this no-bake version is gluten-, nut- and dairy-free. What they lack in carbs and fat, they make up for in tasty, wholesome goodness!
No-Bake Chocolate Chip Cookies
Makes 10 cookies
Macros per serving: calories 129 g | 7 g total fat | 21.3 g carbs | 10 g dietary fiber | 2 g protein
Ingredients
1 cup tigernut flour
5 tsp. maple syrup
1 tsp. pure vanilla extract
¼ tsp. salt
2 Tbsp. cacao chocolate chips or nibs
1 tsp. water
Directions
- In a large bowl, combine all ingredients and mix until fully combined.
- Scoop out balls of dough and flatten into cookie shapes.
Liana’s tips:
- Let the cookies sit on the counter for 15-20 minutes before serving. As they dry, they’ll feel freshly baked.
- If you prefer crunchy cookies, they can be baked at 375 degrees F for 10 minutes or until golden brown.
