Simple to prep yet complex in flavor, this invigorating summer salad will cool you off and warm you up at the same time. Rather than using a pre-made dressing, piquant greens – including arugula, avocado, cucumber and mung bean sprouts – are tossed in a sweet and spicy vinaigrette that’s sure to delight your taste buds. Hearty enough to be your main course, it’s also an excellent side dish (especially with this cauliflower crust “cheese” pizza). Ingredients

  • 4 cups arugula
  • 1 avocado sliced into wedges
  • 1 cucumber sliced
  • 3/4 cup mung bean sprouts

Dressing

Instructions

  1. In bowl, arrange salad ingredients over arugula.
  2. In cup, mix together all dressing ingredients until well combined. Pour over salad.
