Mexican Black Beans & Rice

by | Updated: August 23rd, 2021

Black beans and rice may be simple, but it’s a tried-and-true, long-standing staple for a reason. It’s simply delicious, high in protein and works as a complete meal or a complementary side for many main dishes. The fresh cilantro and lime juice in this low-effort recipe kicks up the flavor profile. But feel free to customize it with hot sauce, salsa, avocado, jalapeño, cheese or anything you’d like. You can even scoop it up with tortilla chips!
