Calling all superfood lovers – this toast is the ultimate treat for breakfast and brunch. It’s tasty, crispy, loaded with flavor and infused with nourishing green goodness! Matcha is a green tea that’s high in chlorophyll and has an extremely high level of antioxidants.

Matcha-Coconut French Toast

Ingredients
- 1 large loaf brioche or challah bread
- 5 tsp. matcha green tea powder, divided
- 1 tsp. Vitacost Organic Cinnamon
- ½ tsp. Simple Truth Organic Nutmeg
- ¼ tsp. Vitacost Himalayan Pink Salt
- 1-2 Tbsp. coconut sugar
- 2-3 Tbsp. warm water
- 1 tsp. Flavorganics Organic Vanilla Extract
- 2 eggs
- 13.5 oz. (1 can) Native Forest Organic Coconut Milk
- 1-2 tsp. Vitacost Organic Coconut Oil
- 3 Tbsp. light brown sugar
- 4 Tbsp. Bob’s Red Mill Coconut Flakes
- 4 Tbsp. Shiloh Farms Sliced Almonds
Instructions

In cup or mug, mix 2 teaspoons matcha with warm water to dissolve. Next, in large bowl, whisk coconut milk, coconut sugar, eggs, salt, cinnamon and nutmeg to create batter. Pour matcha mixture into batter and combine. Set aside.

On plate, combine brown sugar, coconut flakes, almonds and 2-3 teaspoons matcha to create a “dry rub.”

Cut bread into 1- or 2-inch-thick slices. Dip slices into batter to evenly coat both sides. Then, dip one side only into dry rub.

In skillet over medium-high heat, melt coconut oil. Cook one slice until browned, then flip. Repeat with remaining slices.

Garnish with toasted coconut flakes, almond slices, maple syrup and an extra sprinkle of matcha.
