Mango Avocado Salsa

When mangoes are in season, it’s inspiring to explore all the ways to use this sunny stone fruit. This salsa puts a juicy twist on traditional tomato-based varieties, combining mango with avocado, cilantro and lime juice. Red wine vinegar gives it a little more lip-smacking kick, but it doesn’t overpower. Scoop some up with tortilla chips or spoon it onto grilled fish. Surprise friends and family with this bright spin on a favorite.

Instructions

  1. In medium serving bowl, combine mango, avocado, cilantro, lime juice, vinegar, salt, pepper and onion if desired.
  2. Serve immediately with tortilla chips.
  3. Store refrigerated in airtight container for up to two days.
