Lentil & Spinach Soup

Ingredients

Instructions

  1. In medium soup pot over medium heat, heat olive oil. Sauté onion, carrots and peppers 5 minutes. Stir in garlic, vegetable broth, lentils and spices.
  2. Bring to boil. Turn down to simmer; cover. Let simmer 20 minutes, until lentils are cooked.
  3. Before serving, stir in spinach to wilt.
