Ingredients
- 1 Tbsp. olive oil
- 1 cup onion chopped
- 1 cup carrots sliced
- 1 cup red bell pepper diced
- 1 clove garlic crushed
- 32 oz. vegetable broth
- 1 cup green lentils
- 1 tsp. salt
- ½ tsp. ground turmeric
- ½ tsp. cumin
- ¼ tsp. black pepper
- 3 cups fresh spinach leaves
Instructions

In medium soup pot over medium heat, heat olive oil. Sauté onion, carrots and peppers 5 minutes. Stir in garlic, vegetable broth, lentils and spices.

Bring to boil. Turn down to simmer; cover. Let simmer 20 minutes, until lentils are cooked.

Before serving, stir in spinach to wilt.
