Ingredients
- 3 Tbsp. unsalted grass-fed butter
- 1-½ cups carrots peeled and diced
- 1-½ cups celery diced
- ½ cup onion diced
- 1 tsp. Himalayan salt
- ½ tsp. black pepper
- 1 tsp. minced garlic
- 6 cups chicken broth
- 2 large lemons juiced
- 1-½ cups cooked chicken shredded or chopped
- 1-½ cups cooked gluten-free orzo
- 4 cups fresh spinach chopped
- 3 Tbsp. fresh parsley chopped
Instructions

In large stockpot, melt butter over medium heat. Add carrots, celery, onion, salt and pepper and sauté until tender, about 12-15 minutes.

Add garlic and cook for 1-2 minutes.

Add chicken broth, chicken, orzo and lemon juice.

Turn heat to medium-low and slow-simmer for 15 minutes.

Add spinach and parsley. Cook about 5 minutes until spinach wilts.
