Lemony Chicken & Spinach Orzo Soup (Gluten-Free)

Ingredients

  • 3 Tbsp. unsalted grass-fed butter
  • 1-½ cups carrots peeled and diced
  • 1-½ cups celery diced
  • ½ cup onion diced
  • 1 tsp. Himalayan salt
  • ½ tsp. black pepper
  • 1 tsp. minced garlic
  • 6 cups chicken broth
  • 2 large lemons juiced
  • 1-½ cups cooked chicken shredded or chopped
  • 1-½ cups cooked gluten-free orzo
  • 4 cups fresh spinach chopped
  • 3 Tbsp. fresh parsley chopped

Instructions

  1. In large stockpot, melt butter over medium heat. Add carrots, celery, onion, salt and pepper and sauté until tender, about 12-15 minutes.
  2. Add garlic and cook for 1-2 minutes.
  3. Add chicken broth, chicken, orzo and lemon juice.
  4. Turn heat to medium-low and slow-simmer for 15 minutes.
  5. Add spinach and parsley. Cook about 5 minutes until spinach wilts.
