Ingredients
Crust
- 12 lady finger cookies
- 4 medjool dates pitted, softened in hot water 5 minutes, drained
- 1 cup coconut flakes toasted
- 2 Tbsp. water
Filling
- 2 medium avocados
- 7.4 oz. sweetened condensed coconut milk
- 2 tsp. lime zest
- 1/3 cup lime juice
- Pinch salt
Instructions

In food processor, combine lady finger cookies, soaked dates and toasted coconut flakes. Pulse until cookies are broken into crumbs. Add water, pulse again until mixture is slightly moist and crumbly.

To 9-inch pie pan, add crust mixture and press evenly into bottom and sides. Place in fridge to chill.

In clean food processor, combine all filling ingredients and pulse until smooth.
