Bored with burgers? Pass on the patties and make meatloaf instead! Here’s some inspiration. This 100% keto-friendly loaf (thanks to a little help from almond flour as a binder) is made with grass-fed ground beef, pork, veggies and a blend of spices for a homestyle slice even better than the kind Mom used to make. The bacon wrap makes an impressive (and impossible-to-resist!) finish. Serve a nice, thick slice with your favorite low-carb vegetables for an unforgettable, protein-packed meal.

Instructions

  1. Preheat oven to 350 degrees Line baking sheet in tin foil.
  2. In large bowl, mix together ground beef, ground pork, carrots, mushrooms, spinach, onion and seasonings. Using hands, form meatloaf. Wrap bacon over loaf, leaving bottom unwrapped.
  3. Bake on top rack 75 minutes, then broil 5 minutes.
