Instructions

  1. Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
  2. In food processor, blend together onion and spinach. Stir in garlic.
  3. In large bowl, combine beef, onion-spinach blend, apple cider vinegar, pasta sauce, egg and meatball seasonings. Roll mixture into evenly sized meatballs; arrange on prepared baking sheet. Bake 35 minutes.
  4. Meanwhile, in large pot, bring water and soup spices to boil.
  5. Stir in broccoli, cauliflower, onion, garlic, celery and coconut oil. Boil 15 minutes, until vegetables are soft.
  6. Stir in tomato sauce and meatballs; cook until flavors combine. Remove from heat; let sit 10 minutes.
