Let’s hatch a plan. Create a 30-minute weeknight entrée that’s almost as easy to make as it is to eat. This hummus-crusted chicken fits the bill! Simply slather chicken breast with hummus and roast for 25 minutes. Easy-peasy, right? The spread not only provides flavor, but it also helps keep the meat tender and juicy while roasting. No more dry chicken on your dinner table! This recipe also features olives and roasted red peppers as toppings to make the dish extra tasty. Ingredients

Instructions

  1. Preheat oven to 375 degrees F.
  2. Season chicken breasts with salt, pepper and Italian seasoning.
  3. Spread 1 Tbsp. hummus in a thin layer on top of each chicken breast.
  4. Top one with sliced olives and the other with roasted red peppers.
  5. Bake 25-30 minutes until chicken is 165 degrees F.
