Conventional marshmallows (including marshmallow spreads) are loaded with added sugars, gelatin, corn syrup, artificial flavors and other icky ingredients. But that doesn’t mean you can’t enjoy the nostalgic flavor of this s’mores’ star.
Made with three ingredients, this recipe is easy to make and easy to serve. Start by spreading a generous layer between two cookies (we like using homemade but prefer Enjoy Life’s Soft Bake Snickerdoodle Cookies when we’re in a pinch!). Then, add some slightly-melted chocolate and voila! You’ve got a sweet, simple and vegan-friendly snack for you and your crew to munch on after school or after dark.

Fluffy Marshmallow Spread (Vegan)
Ingredients
- 15 oz. can chickpeas or white beans, with or without salt
- 1/2 cup fine cane sugar
- 1 Tbsp. pure vanilla extract, optional
Instructions

Open canned beans and drain liquid into stand mixer or large mixing bowl – should be around 1/2 cup liquid. (Reserve beans for future recipe.)

Add remaining ingredients to bowl and beat with electric mixer (or in stand mixefor 12-16 minutes. Note: It will begin to thicken around minutes 10-11.

Cover and refrigerate leftovers.
