Homemade Corned Beef Hash

Ingredients

  • 2 Tbsp. olive oil
  • 1 small yellow onion diced
  • 3 cloves garlic minced
  • 2 cups red skin potatoes cooked and cubed
  • 1 tsp. Worcestershire sauce
  • 1/4 tsp. paprika
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 2 cups corned beef cooked and cubed
  • Chives finely chopped
  • Parsley finely chopped

Instructions

  1. In large skillet, heat pan with olive oil over medium-high heat. Add onion and cook until translucent, then add garlic and sauté until fragrant.
  2. Add potatoes and cook until lightly browned.
  3. Add Worcestershire sauce, paprika, salt and pepper. Turn down heat to medium, add corned beef and cook for 5 minutes or until completely heated.
  4. Garnish with chives and/or parsley.
