Instant Pot Homemade Coconut Milk Kefir

Kefir is very popular with its tangy flavor and good-for-you bacteria. However, most varieties in the grocery store are made with regular milk, and that’s a problem if you’re not a fan or cannot tolerate dairy products. Thankfully, as an easy alternative, you can use your Instant Pot yogurt setting to make coconut milk kefir. It’s an awesome way to get the same taste and nutrients if you are vegan or dairy-free.

Ingredients

8 cups unsweetened coconut milk
1 packet vegan culture starter

Directions

  1. In Instant Pot, add coconut milk and culture starter and whisk together.
  2. Cover Instant Pot and push yogurt button, programming it to run 8-hour yogurt cycle.
  3. When cycle has completed, remove cover and pour coconut kefir into glass jars. Once fully cooled, store in refrigerator. Use within one to two weeks.

Tip: To make a kefir smoothie, blend 1.5 cups kefir with 3 frozen strawberries, 1/2 a ripe banana and 1/2 tsp. vanilla.
