Ditch sugary jelly or jam for fresh blackberries with this healthy PB&J sandwich. With a pinch of cardamom in the nut butter, it’s a welcome upgrade to this childhood favorite. Cardamom has a zesty citrus flavor that’s sweet and spicy at the same time. Mixed with the nutty, rich taste of almond butter or smooth peanut, and paired with the sweet-tart tang of blackberries, well, we’d tell you how next-level it is but our mouths are too full of the next bite. Healthy PB&J Sandwich with Cardamom Nut Butter & Blackberry-Chia Jam

Ingredients

Instructions

  1. To make jam: In medium saucepan over medium heat, bring blackberries and ¼ cup water to boil.
  2. Stir in chia seeds, reduce heat to simmer and cook for approximately 15 minutes, stirring almost constantly, until mixture is very thick.
  3. Remove from heat and let cool. (Note: Jam can be stored in airtight container for up to a week.)
  4. To make nut butter: In bowl, stir together nut butter and cardamom.
  5. Spread jam and nut butter on bread to make sandwich.
