Halloween breakfast ideas are aplenty. Though often cute and festive, the typical treats can be pretty scary, nutritionally speaking, with excess amounts of sugar and artificial ingredients. There’s a time and a place for sweets and snacks, but breakfast should be rich in nutrients. Serve your little ones these funny mummy pancakes and you’ll get a treat without the tricks – just wholesome, good-for-them ingredients, complete with spooky decorations they’ll love to sink their teeth into.
Makes 3, 6-inch pancakes or 6, 4-inch pancakes
Ingredients
Pancakes
1 cup garbanzo and fava bean flour
1/4 tsp. pink salt
1/2 tsp. baking powder
1/2 cup applesauce
1 egg replacer + 2 Tbsp. water (or 1 whole egg)
2 Tbsp. maple syrup
1/2 cup milk (of choice)
1 Tbsp. coconut oil, plus more for cooking
1/2 tsp. vanilla
Mummy toppings
1 cup coconut cream, chilled
2 Tbsp. maple syrup
1/4 tsp. vanilla
Banana slices
Berries
Directions
- To prepare pancakes, sift together dry ingredients, then mix with remaining ingredients.
- Heat a non-stick or cast iron skillet to medium and coat with coconut oil. Pour 1/2 cup batter into pan per pancake and shape into a circle with back of spoon. (Note: This will make 6-inch pancakes. For smaller pancakes, use 1/4 cup batter.)
- Cook each pancake on one side for about 2 minutes or until bottom of pancake is cooked, then carefully flip over and cook another 2 minutes. Add more oil as needed to pan between each pancake.
- For icing, whisk together coconut crema, maple syrup and vanilla. Drizzle 1-2 tablespoons on each pancake to decorate. Place banana slices on top of pancake for eyes and top with one berry per eye.
