Ingredients
Salsa
- 2 mangoes cubed
- 2 small avocados cubed
- 1 medium tomato cubed
- 2 Tbsp. lime juice
- 1 Tbsp. olive oil
- ¼ tsp. salt
- ¼ tsp. black pepper
- 2 Tbsp. fresh cilantro chopped, optional
Salmon
- 1 lb. fresh skin-on salmon
- 1 Tbsp. ground coriander
- 1 Tbsp. chili powder
- 1 Tbsp. honey
- 2 Tbsp. lime juice
- 2 Tbsp. olive oil
Instructions

Gently toss together mango, avocado, tomato, lime juice, olive oil, salt, pepper and cilantro. Cover; chill until ready to serve.

In medium pan, submerge salmon flesh-side down into marinade. Let sit at room temperature 20 minutes.

Heat grill about 500 degrees. Oil salmon skin to prevent sticking.

On pre-soaked wood plank or foil, place salmon skin-side down. Grill 10 to 15 minutes, until internal temperature reaches 145 degrees F and salmon flakes easily with fork.

Remove from heat; let rest. Serve with mango salsa.
