Ingredients
- 1 Tbsp. avocado oil
- 1 lb. green beans ends removed
- 2 large garlic cloves minced
- 1/4 tsp. Himalayan pink salt
- 1/8 tsp. ground black pepper
Topping
- 1/4 cup avocado oil
- 1 small onion minced
- 1 large garlic clove minced
- 2 Tbsp. red wine vinegar
- 1 1/2 tsp. agave
- 2 tsp. Dijon mustard
- 1/8 tsp. Himalayan pink salt
- Pinch of black pepper
- 3 green onions finely chopped
- 1 tbsp. flat-leaf parsley minced
Instructions

In medium frying pan over medium heat, add oil. Once hot, sauté green beans with garlic for 5 minutes. Add salt and pepper and cook for an additional minute. Set aside to cool.

In small frying pan on medium-high heat, add oil and sauté onion until golden brown and crispy, for 10 minutes. Add in garlic and sauté for an additional minute. Remove from heat, strain garlic and onion, saving the oil for dressing.

In mason jar, add infused oil, red wine vinegar, agave, Dijon, salt, pepper and shake until well combined.

Pour over green beans and toss to coat.

Place green beans on a serving dish, top with green onion, crispy onion and garlic mixture and parsley.
