Unlike the ones from your childhood, these easy, “cheesy,” better-for-you pizza rolls are gluten-free and vegan-friendly. Using just a handful of ingredients, pizza sauce and plant-based “cheese” are stuffed inside a doughy casing and cooked to golden-on-the-outside, melty-on-the-inside excellence. Perfect for anything from after school snacking to a mid-day bite, the whole family will enjoy these finger food favorites.

Instructions

  1. Preheat oven to 400 degrees F.
  2. In medium bowl, blend flour and salt. Add water slowly, until dough is only slightly sticky. Let rest at room temperature at least 10 minutes.
  3. On floured surface, knead the dough for a couple minutes. Roll out to 1/8”-thickness. Cut rectangles, approximately 1.5"x3" each.
  4. Mix together sauce and cheese until well combined.
  5. In center of each roll, place a teaspoon filling. Moisten the sides; fold dough in half, lengthwise, so that it forms a filled rectangle. Press edges lightly to seal.
  6. Arrange pizza rolls on baking sheet. Brush each with a small amount of olive oil. Sprinkle cheese on top, if desired.
  7. Bake 25 to 28 minutes or until golden and crisp.
