Baked on a cookie sheet instead of in a loaf pan, it comes together more like a pastry than a traditional bread. In place of yeast, soda bread gets its dense yet soft texture from buttermilk and cold butter. Ingredients
- 4 cups Namaste Perfect Flour Blend
- 3 Tbsp. sugar
- 1 Tbsp. double-acting baking powder
- 1 tsp. salt
- 3/4 tsp. baking soda
- 6 Tbsp. cold butter
- 1-1/2 cups raisins
- 2 eggs
- 1-1/2 cups buttermilk
Instructions

Preheat oven to 350 degrees F. Grease or spray baking sheet.

In large bowl, whisk together flour, sugar, baking powder and salt. Cut butter into mixture until mixture resembles coarse crumbs. Stir in raisins.

In small bowl, beat eggs slightly; reserve 1 tablespoon. Stir buttermilk into egg mixture.

Stir eggs into flour until just moist and dough is sticky.

On well-floured surface, knead dough 10 strokes to mix thoroughly. Shape into 8” to 9” round circle; place on prepared baking sheet.

In top, center of dough, cut an “X” 4 inches across and a ¼” deep. Brush reserved egg on top.

Bake 70 to 80 minutes. Cool on rack 10 minutes. Remove from baking sheet; cool completely on rack.
