Tuna, Salmon & Scallion Fish Burgers

Burgers are definitely one of the most popular foods, but maybe you’re tired of the same old beef patties with lettuce, tomato and onion. Try mixing things up by opting for a fish burger instead. These patties are made of tuna and salmon and held together with garbanzo bean flour. Fresh scallions and a blend of spices infuse the burgers with a savory flavor profile that perfectly complements the seafood. They’d go great with some homemade sweet potato fries!

Ingredients

1/2 cup Bob’s Red Mill Garbanzo Bean Flour
12 oz. skinless boneless salmon, canned
10 oz. white albacore tuna, canned
1/2 tsp. garlic powder
1/4 tsp. ground ginger
1/4 tsp. crushed red pepper
3/4 tsp. salt
1 cup sliced scallions
4 eggs

Directions

  1. Preheat oven to 375 degrees F and line baking sheet with parchment paper.
  2. In large bowl, add all ingredients and mix until just combined.
  3. In large nonstick skillet, heat a little oil over medium heat. Depending on desired patty size, use either a 1/4 or 1/2 cup of mixture, roll into balls and lightly flatten. Cook until golden brown, approximately 5 to 10 minutes on each side.
  4. Arrange patties on baking sheet and bake 25 minutes.
