Festive Cranberry Bread (Gluten-Free)

Ingredients

Optional: 1/2 cup finely chopped walnuts or pecans

Instructions

  1. Preheat oven to 350° F. Lightly oil 9x5-inch loaf pan.
  2. In large bowl, whisk together all dry ingredients.
  3. Cut in butter until mixture resembles coarse cornmeal.
  4. In separate bowl, combine orange juice, orange zest, lemon juice, lemon zest, SunButter and egg.
  5. Pour wet mixture into dry ingredients, mixing just enough to dampen.
  6. Fold in nuts and cranberries.
  7. Spoon mixture into loaf pan.
  8. Bake for 55 minutes. A knife or toothpick inserted in center should come out clean.
  9. Cool bread in pan for 15 minutes and then turn out onto a wire rack to cool completely.

Recipe Notes

The naturally occurring chlorophyll in the sunflower seed butter may give a slight green tint to the bread. This is totally natural!
