Easy, Keto Diet-Friendly Bread

No matter how you slice it, bread is pretty low on the list of foods you’d want to give up eating. Thankfully, you don’t have to! This easy recipe is gluten- and dairy-free and, best of all, keto-diet friendly! Enjoy it paired with soup, slathered with your favorite toppings or plain, warm and straight from the oven.

Ingredients

1/2 cup vegan cream cheese
1/4 cup Primal Kitchen Avocado Oil or vegan butter
4 organic eggs
1 tsp. Simply Organic Rosemary
1/2 tsp. Simply Organic Sage
1/2 tsp. Simply Organic Parsley
1/2 tsp. Simple Organic Oregano
1-1/4 cup Bob’s Red Mill Super Fine Almond Flour
1/2 cup + 2 Tbsp. Nutiva Coconut Flour
3/4 tsp. baking powder

Directions

  1. Preheat oven to 350 degrees F.
  2. In bowl, use electric mixer to whip vegan cream cheese and avocado oil or vegan butter until smooth and fluffy. Fold in eggs and spices, then incorporate flours and baking soda. Fold until dough is thick.
  3. In loaf pan, press dough until even.
  4. Bake bread 55 minutes or until golden brown on top.
