Easy Gluten-Free Crepes

Ingredients

  • 1 cup gluten-free flour
  • 1 cup unsweetened vanilla nut milk
  • 4 eggs
  • Pinch sea salt

Instructions

  1. In high-speed blender, combine all ingredients and blend until whipped.
  2. In medium-sized skillet over medium-high heat, add oil.
  3. Pour thin layer of batter onto skillet. When edges bubble, carefully flip over.
  4. Repeat with remaining batter.
  5. Fill crepes with your favorite nut butter, fruit, nuts and seeds. For an extra special treat, top with whipped coconut cream.
