Creamy Vegan Cucumber Salad

The dressing for this creamy cucumber and red onion salad has a base of thick coconut yogurt to keep it dairy-free. Mix it up with fresh or dried dill and parsley, depending on what’s on hand. Add fresh lemon juice and zest for the perfect light, crisp and refreshing salad.

Ingredients

  • 2 cups English cucumber thinly sliced
  • ½ small red onion thinly sliced

Dressing

  • ½ cup plain coconut yogurt
  • 2 Tbsp. lemon juice
  • 1 tsp. lemon zest
  • ¾ tsp. pink salt
  • ¼ tsp. black pepper
  • 1 tsp. dill dried, or ¼ cup fresh dill, chopped
  • 1 tsp. parsley dried, or ¼ cup fresh parsley, chopped
  • 1 tsp. sugar
  • 1 tsp. vinegar

Instructions

  1. In medium bowl, toss together cucumber and onion.
  2. In small bowl, whisk together dressing and pour over veggies.
  3. Stir to combine and serve immediately or chill before serving.
