Creamy Pear-Coconut Filled Baked Pears

Instructions

  1. Preheat oven to 400 degrees F.
  2. Bake whole pears 1 hour. Remove from oven; let cool.
  3. Cut pears in half. Scoop out flesh, leaving 4 pear halves. Discard seeds.
  4. Using an immersion blender, blend pear flesh with coconut milk, cinnamon, vanilla powder and salt.
  5. Fill each pear half with 1/4 cup pear-coconut cream; drizzle with teaspoon honey. Top with 1 tablespoon chopped walnuts.
