Chicory Latte with Dairy-Free Pumpkin Milk “Cream”

A warm, frothy latte is especially nice to sip on a chilly autumn day. If coffee’s caffeine content is too much for you, and herbal tea isn’t your thing, be sure to check out chicory root. It looks like coffee, tastes like coffee and brews up just the same—only you won’t get jitters or toss and turn at when it’s time to sleep, because chicory is caffeine free! Another bonus: chicory’s a well-known source of prebiotics, which help support healthy probiotic levels in your body.

Chicory Latte Recipe

Creamy Chicory Latte

Ingredients

2 Tbsp. chicory tea
1 cup water
4 drops vanilla stevia
2 Tbsp. raw unsalted pumpkin seeds

Directions

  1. Brew chicory tea just like you would coffee. (Note: If you have a k-cup coffee maker, use a refillable k-cup and fill ¾ with chicory tea. Repeat this step to brew 2 cups of chicory.)
  2. In a blender, combine water, pumpkin seeds, stevia; blend for about 1 minute until smooth.
  3. Pour half of pumpkin seed milk into each cup and serve hot (cool enough so you don’t get burned!).
