Everyone has a friend who’s a little rough around the edges. Isn’t that why you love them, though? Well, it’s exactly why you’ll love four-ingredient coconut macaroons. They crisp up at the very end of their baking time – a mere 20 minutes. Like your friend, their jagged edges have formed from enduring extreme conditions. They’re a bit seared, yes, but not totally burnt, which means you get an enjoyable blend of hard, soft, toasted and sweet. Biting into one of these treats is hardly rough.

Coconut Macaroons (Gluten-Free)

Ingredients

2 cups unsweetened coconut flakes
¼ cup coconut flour
2 Tbsp. raw honey
3 egg whites

Directions

  1. Preheat oven to 350 degrees F and grease a baking sheet with coconut oil.
  2. In a large bowl, stir all ingredients together until well combined.
  3. Roll about 1 tablespoon batter into a ball and place ball on prepared baking sheet. Repeat until all batter is used up.
  4. Bake 15 – 20 minutes, or until tops begin to brown and coconut flakes turn crisp.
