What do a dive bar, a steak restaurant and your pantry have in common? When you pay a visit to any one of these hot spots, you experience an uncontrollable urge to eat whatever’s within arm’s reach. Most often that includes peanuts – and a bottomless bowl, to boot! Unfortunately, what you don’t get is a handful of Cocoa-Roasted Peanuts. Make two cups of this deliciously healthy recipe, so you can stock your pantry (or your purse) with the perfect mindless munchies.
Ingredients
2 cups plain, unsalted peanuts
2 Tbsp. cocoa powder
1 Tbsp. coconut nectar
Directions
- Preheat oven to 300 degrees F and coat a baking sheet with non-stick cooking spray.
- In a large bowl, combine peanuts and coconut nectar, stirring to coat completely.
- Add cocoa powder and stir to coat.
- Bake approximately 20 minutes, stirring occasionally.
- Snack while they’re hot, or let them cool before storing in an air-tight container for later.
