Cocoa-Roasted Peanuts

What do a dive bar, a steak restaurant and your pantry have in common? When you pay a visit to any one of these hot spots, you experience an uncontrollable urge to eat whatever’s within arm’s reach. Most often that includes peanuts – and a bottomless bowl, to boot! Unfortunately, what you don’t get is a handful of Cocoa-Roasted Peanuts. Make two cups of this deliciously healthy recipe, so you can stock your pantry (or your purse) with the perfect mindless munchies.

Cocoa Dry Roasted Peanuts

Ingredients

2 cups plain, unsalted peanuts
2 Tbsp. cocoa powder
1 Tbsp. coconut nectar

Directions

  1. Preheat oven to 300 degrees F and coat a baking sheet with non-stick cooking spray.
  2. In a large bowl, combine peanuts and coconut nectar, stirring to coat completely.
  3. Add cocoa powder and stir to coat.
  4. Bake approximately 20 minutes, stirring occasionally.
  5. Snack while they’re hot, or let them cool before storing in an air-tight container for later.
