Plain white rice is not going to get the gang sprinting to the dinner table. If you expect to elicit any enthusiasm from your crew, your meal needs a base or side dish that deserves it – like cilantro lime rice. With better-for-you brown rice, zesty citrus and flavorful cilantro, this recipe will grab the group’s attention—and their appetites.
Makes 3 cups
Ingredients
1 cup brown rice, rinsed thoroughly and strained
1-3/4 cup water
1 Tbsp. olive oil
1 small bay leaf
1/4 tsp. salt
2 Tbsp. lemon juice
2 Tbsp. lime juice
1/4 cup cilantro, finely chopped
Directions
- In medium pot, combine rice, water, olive oil and bay leaf. Bring to boil, reduce to simmer and cook covered for 40 minutes
- In large bowl, combine rice with salt, lemon, lime and cilantro.
Note: Want more veggies? Make this dish even more nutritious using cauliflower rice in place of brown.
