Bursting with mouthwatering flavors and loaded with crunchy peppers and sweet mango, this salad is light, refreshing and loaded with nutrients. Grilled chicken provides a punch of savory protein to the tropical perfume of the mango, the spicy bite of peppers and red onion and the brightness of cilantro and balsamic glaze. It’s a quick, welcome and thoroughly refreshing way to eat the rainbow!

Chicken, Mango & Bell Pepper Salad

Ingredients

Instructions

  1. Heat grill to 400 degrees F. Season chicken with salt and pepper evenly on both sides.
  2. Place chicken on grill and cook 6-8 minutes on one side with lid closed. Flip chicken and cook with lid closed another 6-8 minutes. (Note: Use meat thermometer to ensure that internal temperature of thickest part of chicken is 165 degrees F.)
  3. Remove chicken and rest 5-10 minutes, then slice into ¾-inch strips.
  4. Using mandolin or knife, thinly slice mango, peppers and onion.
  5. In bowl, toss together chicken, mango, peppers, onion and balsamic glaze.
  6. Sprinkle on cilantro and peanuts just prior to serving.
