Instructions

  1. In soup pot, sauté chicken in olive oil 10 minutes until almost fully cooked.
  2. Add tomatoes, beans and spices. Bring to boil, cover and simmer 15 minutes.
  3. Remove chicken from chili, shred or chop, then add back to chili.
  4. Pour in coconut milk. Simmer additional 10 minutes.
  5. Serve as is or with toppings of choice.
