Cauliflower Cookies with Peanut Butter

Food trends come, and food trends go. But one that has staying power is cauliflower because of its unique culinary versatility. Besides just dipping and snacking, you can chop a head of cauliflower into steaks, roast it whole, finely pulse it into rice or coat the florets with buffalo or BBQ sauce to make better-for-you versions of popular dishes. Now, thanks to this recipe, you can even use the veggie to make cookies! Add peanut butter, coconut flour and vanilla to riced cauliflower and you’ve got healthy and tasty peanut butter-flavored cookies that can’t be beat!

Ingredients

2 cups raw, riced cauliflower
1/2 cup coconut flour
3/4 cup organic, salted peanut butter
2 Tbsp. powdered peanut butter
2 tsp. vanilla

Directions

  1. In a large bowl, mix together all ingredients.
  2. Scoop out dough and roll into bite-sized balls.
  3. For a cookie version, flatten balls with a fork and bake at 350 degrees for 8-10 minutes.
