Ingredients
- 6 organic medium-sized carrots ends trimmed
- 1-2 Tbsp. organic coconut oil
- 2-3 organic limes
- 6 hot dog buns
- 2 organic avocados sliced
- 1 head organic lettuce crisp variety
Cilantro sauce
- Handful organic cilantro
- 1/2 cup organic olive oil
- Pinch Redmond Real Salt Ancient Fine Sea Salt
- Pinch black pepper
- 1 tsp. minced organic jalapeño optional
Instructions

In food processor or high-speed blender, blend together all ingredients for cilantro sauce.

In pot with steamer on stove, steam carrots until tender, about 40 minutes. Set aside until room temperature.

Heat grill. Brush carrots with coconut oil and cook on grill until grill marks are visible. Do not overcook.

Serve on buns, garnish with lettuce leaves and avocado slices, spoon over cilantro sauce and squeeze on lime.
