Buttery Lemon-Dill Potatoes (Vegan)

Ingredients
- 2 lbs. baby Dutch yellow potatoes
- 2 Tbsp. fresh dill, chopped
- 3 Tbsp. Earth Balance buttery spread
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. fresh parsley, chopped
- 1/4 tsp. Vitacost Himalayan Pink Salt, plus more to salt water
- 1/4 tsp. ground black pepper
Instructions

In stockpot over medium-high heat, add potatoes and generous amount of salt. Fill with water until potatoes are covered.

Bring to boil and reduce heat to low; cooking 10 minutes until potatoes can easily be pierced with fork. Drain.

Transfer potatoes to bowl. Add butter, dill, parsley and lemon juice and carefully stir until evenly coated. Season with salt and pepper. Serve immediately.
